Sounds like your trip will be a great mix of fun in the sun and cultural experiences. Here's my earlier post about Vanuatu.
Hana Island in Vanuatu:
Live volcano that you can climb to the top of - the ground will shake and lava will the thrown up in the air miles above your head. Totally ruined my handycam.
Two tribes still live the traditional way on Hana Island. The mountain tribe pick their coconuts and trade with the lower tribe who barter their seafood.
A tour operated by one of the tribesmen will take you to the mountain tribe for a visit to the village in the banyan trees on the way up to the volcano. They still live traditional lives (not dress ups for the tourists). the men grow their hair long, it is forbidden for women to touch their hair or they lose fertility, grass skirts and codpieces, etc. Your fee goes to providing medicine and other western essentials for the tribe. Excite the socialogist in you?
Well, make sure your wife is into this one, cause the plane ride from Vila (the capital of Vanuatu) is on a ten seater prop planes and we had in the back seats. I was only convinced to go on it when I met the pilot (Alaskan Air guy who loves the Pacific in the off season). Hana Island is BASIC.
Vila is more exotic and resort-ish. Snorkeling in Vila for a day or two should help smooth things over with wifey, no?
